smashed avocado and poached eggs with feta toast

Ingredients Method
  • 2 Pace Farm eggs
  • 1 avocado
  • 2 tablespoons white wine vinegar
  • 50g feta
  • 1 teaspoon of chilli flakes
  • ½ lemon squeezed
  • 2 slices of sourdough bread
  1. Pour water into a large saucepan to fill it and add the vinegar. Bring to a boil and turn down the heat once boiled to allow the water to simmer.
  2. Create a whirlpool in the pan by using a spoon to swirl the water and crack the two eggs and cook for 5 minutes or until your liking.
  3. Mash avocado with chilli flakes and feta in a small bowl. Squeeze the lemon into the bowl and season with black pepper.
  4. Toast the bread
  5. Spread the smashed avocado and feta onto the toast then top it with a poached egg on each.
