Sweet potato, feta and caramelised onion quiche

This deliciously savoury sweet potato, feta and caramelised onion quiche is the perfect vegetarian meal for an easy lunch or dinner.

Ingredients Method

2 tbs extra virgin olive oil

1 onion, thinly sliced

2 sprigs rosemary, leaves picked from 1

150g feta, crumbled

7 Pace Farm eggs, lightly beaten

1/3 cup (80ml) milk

1 tsp smoked paprika (pimenton)

1/3 small (about 50g) sweet potato, thinly sliced (use a vegetable peeler)

1 tbs maple syrup

 

  1. Preheat the oven to 200°C and roll out the pastry on a lightly floured work surface to 3mm thick. 
  2. Use this pastry to line a 24cm fluted ceramic dish. Line with baking paper and fill with pastry weights. 
  3. Bake for 25 minutes or until lightly golden. Remove weights and paper and bake for a further 20 minutes. 
  4. Reduce the oven temperature to 160°C. 
  5. Heat oil in a frypan over low heat. Add onion and salt and stir for 12 minutes or until caramelised. 
  6. Let this cool and then add to the pastry case with half rosemary leaves and 100g feta. 
  7. Whisk Pace Farm eggs, milk, and paprika in a bowl. Pour this into a pastry case. 
  8. Coat sweet potato with maple syrup and arrange over filling. 
  9. Scatter remaining feta and rosemary. 
  10. Bake for 1 hour then let it cool slightly before serving.
