Mushroom and Capsicum Frittata

Ingredients Method

  • 6 Pace Farm eggs

  • 4 mushrooms, sliced

  • ¼ capsicum diced

  • ½ onion, sliced

  • 1 tbsp olive oil

  • ½ cup milk

  • 1 tbsp feta, crumbled

  • Salt and Pepper

  • Sprinkle of herbs

  • Sprinkle of garlic powder

  • Cooking spray

  1. Preheat oven to 180C

  2. In a non-stick frypan, heat olive oil and cook onion, capsicum for 5-7 mins until soft.  Add sliced mushrooms, dried herbs and garlic powder and stir fry for 3-4 minutes.

  3. Spray cooking oil onto a small ovenproof dish. Place onion mixture into the dish.

  4. In a bowl, mix 6 eggs, salt and pepper and milk and whisk.  Pour over mixture in dish.

  5. Bake for 20 minutes or until cooked through

  6. Cut and serve onto a plate, and top it with cheese (optional).
