Avocado Egg Salad Sandwich

You don’t make friends with salad...unless it is an avocado egg salad. This avocado egg salad sandwich is the perfect way to get in all your healthy fats and protein.

Ingredients Method

 3 hard-boiled Pace Farm eggs — , chopped

 1 avocado — , cored

 1/4 cup chopped red onions

 1 tbsp lemon or lime juice

 1/2 tsp salt

 1/4 tsp black pepper

 8 slices bread

 

  1. Mash avocado in a bowl and add the lemon, onions, juice, salt, pepper and hard-boiled eggs. Mix to combine. 
  2. Lightly toast your bread and spread your salad over 1 slice and top with another.
